Vanilla in Perfume: Vanilla vs Vanillin and the Best Vanilla Oils

Short answer: vanilla is the sweet, creamy, comforting base of most “gourmand” perfumes. Natural vanilla comes from cured orchid pods, but most of the vanilla smell in the world comes from vanillin made in the lab: in 2001, about 85% of vanillin demand was met by synthesis. In perfume, vanilla adds warmth and lasting power. On its own it can feel like dessert. Paired with woods, rum or tobacco, it feels grown-up.
Vanilla is one of the easiest notes to love, and one of the easiest to overdo. Here’s how to pick the right kind.
Vanilla vs vanillin
Natural vanilla comes from the pods of a climbing orchid. The pods are cured for months until they develop their rich smell. Cured pods contain only about 2% vanillin by dry weight, along with many other compounds that give real vanilla its depth.
Vanillin is the main scent molecule. It was first isolated in 1858 and first synthesised in 1874 by Ferdinand Tiemann and Wilhelm Haarmann. Today, most of it is made in the lab.
Perfumers also use ethylvanillin, a close cousin that’s more expensive but smells stronger and sweeter.

How to wear vanilla
- Use less in heat. Vanilla gets sweeter and heavier in hot, humid weather. In summer, choose a fresh vanilla or save it for the evening.
- Winter is vanilla season. Cold air keeps it soft and cosy instead of sticky.
- It anchors other notes. Vanilla is a base note, so it holds lighter notes in place and helps a blend last. A drop under a citrus oil makes the citrus last longer. More in how to layer fragrance oils.
Questions we get a lot
Is synthetic vanillin worse than natural vanilla?
Not worse, just simpler. Vanillin gives the main vanilla smell, cleanly and consistently. Natural vanilla extract adds extra depth but costs far more and varies by crop.
Why does vanilla oil turn darker over time?
Vanillin naturally darkens with air and light. It doesn’t mean the oil has gone off. Judge by smell, and see our storage tips.
Is vanilla only for women?
No. Vanilla with tobacco, rum, woods or cinnamon is common in men’s scents. It all depends on the pairing.
What is a gourmand perfume?
A scent built around edible notes like vanilla, caramel, chocolate, coffee or honey. Vanilla is the backbone of most of them.
